Loose white peppercorns – Piper nigrum

White pepper comes from the same fruit as black pepper ( Piper nigrum ), but is harvested when ripe and then stripped of its outer shell by soaking and rubbing. The result is a light-colored grain with a milder but still spicy flavor, with woody and warm notes. In addition to its culinary qualities, white pepper has digestive, stimulant, and mildly antiseptic properties.

A noble pepper with multiple uses

White pepper is used to spice up dishes without coloring sauces, but it's also used in traditional medicinal preparations. It's known to activate gastric secretion, stimulate circulation, promote assimilation, and warm the body. It's also valued in some natural aphrodisiac formulas.

Description

Round, white to light beige grains, uniform in diameter, with a pungent, hot odor and a peppery taste, less hot than black pepper. Obtained by soaking the ripe fruit, drying it, and then polishing the outer shells.

  • Culinary use: grind or crush directly into dishes, sauces, soups or broths.
  • Infusion (traditional use): 3 to 5 crushed grains for 200 ml of simmering water. Infuse for 10 minutes – up to 2 times a day.
  • Formulation: used in digestive, aphrodisiac or warming herbal blends.

Precautions, side effects and contraindications

  • May irritate mucous membranes if consumed excessively.
  • Not recommended for people suffering from gastritis or gastric ulcers.
  • Moderate use recommended for pregnant or breastfeeding women.

History and traditional use

Pepper, long considered a precious commodity, was used as both currency and medicine. White pepper, more subtle than black, was reserved for light sauces and Ayurvedic or Unani medicines to stimulate digestion, revive the digestive fire (agni), and warm the body during colds.
